Any performance car is going to generate high insurance rates, unless you are over forty...

Any 25 year old vehicle is going to be hard to find parts for... any performance vehicle, those parts are more expensive.... a salvage yard motor (if you can find one ) for that car will run 500-800.00, a new crate motor 2500.00-3000.00

You have to consider the total cost of the car not just the price of the non running body.

Your problem seems to be you are looking for an expensive car but you don't have the money to pay for it so you are looking for any cheap way to get into that car. Trust me, buy a well maintained car you can afford not a junk yard dog and avoid the hassle of rebuilding.
